Quinoa SaladPasta/Quinoa Salad

3 cups cooked and cooled GF pasta/quinoa
½ c diced red pepper
½ c diced cucumber
½ c diced zucchini
½ c diced yellow squash
½ c diced carrots
½ c halved grape tomatoes
1 chopped green onion
½ basil emulsion

Mix all ingredients thoroughly.

Variation: Use roasted vegetables (I use zucchini, squash, peppers, onion, and tomatoes) and warm pasta/ quinoa as a great side dish for your marinated steak or chicken)
